Just sharing a picture of my homemade fruit scones. ☕️🫖 They are soft, buttery, and absolutely delicious! 📝 Ingredients 450 g self-raising flour 100 g unsalted butter, cold and cubed 75 g caster sugar 150 g raisins or sultanas 2 large eggs 150 ml whole milk 1 teaspoon vanilla extract A pinch of salt 1–2 tablespoons milk, for brushing Icing sugar, for dusting 👩🍳 Method 1. Preheat the oven to 220°C (425°F). Line a baking tray with parchment paper. 2. In a large bowl, add the self-raising flour and salt. Rub in the cold butter with your fingertips until the mixture resembles fine breadcrumbs. 3. Stir in the caster sugar and raisins or sultanas. 4. In a separate bowl, whisk together the eggs, milk and vanilla extract. 5. Make a well in the centre of the dry ingredients and gradually add the liquid mixture. Stir gently until a soft dough forms. Do not overmix. 6. Turn the dough onto a lightly floured surface and gently knead it just a few times. 7. Roll or gently press the dough to about 2–3 cm thick. 8. Using a round cookie cutter, cut out the scones. Place them on the prepared baking tray, close together for softer sides. 9. Brush the tops lightly with milk. 10. Bake for 10–15 minutes, or until the scones are risen and beautifully golden. 11. Transfer to a wire rack and allow them to cool slightly. 12.
